One of the great things about colder weather is that it is time for braising, stewing and roasting again! Here is a great suggestion from our friend Chef John about braising that delicious, but under-appreciated cut: beef shank. Be sure to check out our recipes page for more Chef John ideas for every beef cut under the sun. Enjoy! 😉

Awesome…. Can I transfer this to a crock pot for the 3-4 hour cooking portion of the process… say put it on the low crock pot setting!
I think that it will be just fine
Packaged onion soup mix – that should NEVER be part of cooking. Nice to know there are other folks out there who savor marrow!!! YUM! Definitely going to be crockpot for me, but and no carrots or celery (not a fave), but the onion soup concept combined with beef shank and marrow will be a keeper for me.
This is a great receipe! I always have to add my own touch, so I reduced the stock by 1/2 cup, and added stewed tomato’s that were rough chopped. Added some great flavor to the dish!
I tried this recipe using Osso Buco instead of the Beef Shank. It was very delicious. Thank you !!!
